Heavenly tasting & life-saving rolls...
Hello everyone! I am so glad that so many of you have started to read my blog. I hope that I can continue posting interesting information and tasty treats for a long time; especially, since I am just about finished writing and organizing my Grad thesis!!! (Yay, me!!!) Going to school, non-stop for 19 years has been quite an adventure. I am both happy and sad that it's over; but, I am looking forward to pursuing a Ph.D. within the next couple of years, as well as attending culinary school. I'm crossing my fingers that I can finish culinary school before I start a Ph.D. program. :) Anyhow, enough about me already, let's talk about the heavenly, Raspberry Rolls with Cream Cheese Icing that I made this morning!
I wanted to make another batch of rolls, but I knew that I really didn't feel like making the classic cinnamon rolls that I usually make. So, I decided that I would make raspberry rolls with Trader Joe's amazing raspberry preserves made with fresh raspberries! I decided that I wanted to have fresh rolls this morning for breakfast, so I made the dough last night. I rolled out the dough, spread a thin layer of cream cheese, then spread a layer of raspberry preserves, rolled up a dough log, cut the log into 12 slices, arranged them in the baking dish, covered them with plastic wrap, and let them chill in the fridge over night. And, this morning, all I had to do was let them rise 1-hour; then, pop them into the oven for 35 minutes. Oh yeah, I also whipped up a delicious cream cheese icing and tinted it a light pink with Wilton's rose/pink gel.
As these pretty, life-saving pinwheels baked in the oven the whole house smelled amazing! And, you may ask, why life-saving?! Well, raspberries happen to contain significant amounts of polyphenol antioxidants such as anthocyanin pigments which are linked to promote potential health protection against various human diseases such as heart disease, cancers, and some neurological diseases. Raspberries also contribute a high amount of fiber and Vitamin C to our diets. How's that for something good for you to eat?! I might just have to make these rolls everyday. ;)
I hope that you enjoy making and consuming these jewel-tone delights. My secret is in the dough, and I have perfected this recipe by trail and error, so by now, I know this recipe by heart. However, you can use any sweet dough recipe or this dough recipe from the Sunday Baker or this recipe from Williams-Sonoma. You can mix and match a variety of flavors in the dough, fillings, and icings; all it takes is a little bit of imagination!
