In order to stay up to watch "Burn Notice" on USA with my sister, I had to keep busy and decided that I would make a pear crostata. I have been making my crostata dough for several years now, and I don't remember where I got the recipe for it. However, I do know, that it didn't work out the first time I made it, and had to change the ingredients in the dough recipe a bit. So, my advice is to use your favorite pie crust as the base. Something tried and true, is always better than something new, that doesn't turn out. Pear is my fruit of choice for crostatas, but you can easily substitute them with apples, plums, or nectarines. Crostatas are best served hot out of the oven with vanilla bean ice cream or whipped cream. Such a simply divine late night snack!
