Coconut Tea Cake

I think I was trying to hold on to summer just a little bit longer when I decided to make this delicious Coconut Tea Cake from Dorie Greenspan's book, "Baking from My Home to Yours." It was so light in texture and flavor. I will definitely be making this bundt cake during the Spring and Summer of next year. :)
