An Irish American Feast

Happy St. Patrick's Day to 'ya! Ever since I can remember, my family has always had Corned beef & Cabbage on St. Patrick's Day, as a way to celebrate our ancestors. I know that some people don't consider this "authentic," but we are Irish-American's now, so we celebrate this day in our own way. This year, I decided to serve herb-roasted potatoes and carrots with the corned beef and cabbage; as well as, making some parmesan-herb rolls. Last night, I got started on the rolls, and let the dough rise over night. And, I am so glad that I did. Those little rolls were addicting! Anyhow, I just wanted to share my Irish-American feast with y'all! May the luck 'o the Irish be with 'ya! :)
