Eggplant Parmesean...

Today, I decided to make baked Eggplant Parmesean, since, today is the third Friday of Lent. I made my own bread crumbs, and spiced them to my liking with a blend of Italian-esque spices. While I was doing that, my mom made a delicious sauce for the side of spaghetti. It consisted of fresh tomatoes and basil as the base. It came out tasting as if it were a light cream sauce. The meal tasted delicious! Even, my Nana, who doesn't like eggplant, thought that it tasted good! :)
